The Model 2100 has three sharpening stages that can be used all together to create a finely honed edge, or in different combinations to create edges with varying degrees of "tooth".
- Stage 1 - Coarse for fast resharpening
- Stage 2 - Medium for refining the edge
- Stage 3 - Fine stropping for polishing to a razor edge
Removable Sharpening Module
The Chef's Choice 2100 Commercial Diamond Hone Knife Sharpener by EdgeCraft features an easily removable sharpening module. Cleaning is simple, remove the module and sanitize it in a sink or commercial dishwasher. And after years of wear, you can simply replace the module. No need to get a whole new machine.
The included module sharpens to 20 degrees. Replacement 20 Degree Modules are available.
For those that prefer a 15 degree bevel, replacement Asian Style Modules are also available.
